9 Dosa Varieties – Make different varieties of Dosa with a single dosa batter.
From Masala Dosa to Jini Dosa to Chili Cheese Dosa, you will enjoy all the variations.
These dosa can be served for breakfast, brunch or as evening snack.
The Dosa batter was ground in Vitamix and fermented in the instant pot. You can use any of these dosa batter recipes to get these golden crispy dosa –
1- Dosa batter made with rice flour and urad dal
2- Dosa batter made with rice and urad dal
Tips to get well fermented batter and get crispy golden dosa –
1 – Soaking & Grinding the ingredients – soak the rice and urad dal, methi and chana dal separately for 6 hours. Grind it to a fine paste, use a high power blender or wet grinder.
2 – Fermenting the batter – fermentation is extremely important when making dosa batter. If you live in cold place you can ferment the batter in the oven with or in the instant pot. I have been fermenting my batter in the instant pot and this method gives me consistent results every single time.
3 – Using a cast iron skillet to make the dosa – cast iron skillet heats the pan uniformly and will give you crispy golden crust dosa.
1- Jini Dosa
Popular street style dosa which is spicy, tangy, crispy and cheesy.
To make the dosa – heat a cast iron skillet, spread oil and wipe it around the tawa. Take a ladle of the dosa batter and spread it evenly. Keep the flame at low and cook for 30 seconds. Now add onion, bell pepper, cabbage (optional), tomato, butter, schezwan chutney, and garam masala (or pav bhaji masala). Mash it and spread it evenly. Add grated cheese and close the lid. Cook for a minute or until the cheese melts. Make sure you are not burning the dosa. Cut the dosa into 4 vertical strips, roll them and serve it hot.
Jini Dosa can be enjoyed as is or with chutney of your choice.
2 – Chili Cheese Dosa
Spread the dosa in a pan and cook for 30 seconds. Now add either Schezwan chutney or any chili garlic sauce and spread it evenly. Add grated cheese and drizzle some oil around the dosa. Close the lid and cook till the cheese melts. Fold and serve the dosa immediately.

Traditional dosa stuffed with potato fry and served with your favorite chutneys.
4 – Vegetable Pizza Dosa
Indian twist to the famous pizza recipe. Dosa forms the pizza base, which is topped with marinara sauce, cheese and vegetables. Detailed recipe with video can be found here.
5 – Podi Dosa
Simple podi dosa made with chutney podi and ghee. You can use any of your favorite Podi recipes. Mine had roasted Chana dal, dry coconut, red chili, cumin, garlic and salt.
Make the dosa, sprinkle the podi and drizzle with ghee. Serve the podi dosa with peanut chutney.
6 – Egg Dosa
Egg Dosa also called as Mutta Dosa, is a popular South Indian dish, especially in the states of Kerala and Karnataka.
Heat a cast iron skillet, spread oil and wipe it around the tawa. Take a ladle of the dosa batter and spread it evenly. Keep the flame at low and cook for 30 seconds.
Now break an egg and spread it evenly around the dosa. Add finely chopped onion, green chili (or red chili powder), coriander leaves and salt to taste. Drizzle some oil around the dosa.
Once the egg sets on the top, flip and cook on other side of the dosa. Remove and serve the egg dosa with chutney.
7 – Dosa Wrap
The famous tiktok tortilla wrap, done Indian way with dosa batter. Dosa is topped with chutney podi, potato fry and green chutney and folded like shown in the picture below.
8 – Crispy Dosa

9 – Pav Bhaji Dosa
Another popular street style dosa made with pav bhaji masala. Spread the dosa batter and cook for 30 seconds. Now add the pav bhaj gravy and spread it evenly and add some pav bhaji masala and chopped coriander leaves. Cook on medium flame, till the dosa gets crispy on the bottom.
