Potato Loquat Curry

Simple Vegan Potato Loquat Curry made with Indian spices.

Ingredients

  • 2 medium potato, peeled and cut to small cubes
  • 1 large tomato, diced
  • ¾ cup loquat, peeled, seeds removed and cut
  • ½ cup green peas I used frozen
  • 1 small onion, finely chopped
  • 1 tsp chopped ginger
  • 1 tsp chopped garlic
  • 1 tsp garam masala or curry powder
  • ½ tsp red chili powder
  • 1 tsp cumin seeds
  • salt to taste
  • lemon juice to taste
  • 3 tsps oil
  • fresh coriander leaves for garnish
  • 2 to 3 cups water depends on how thick you like the curry

Instructions

  • Peel the potato, cut them to small cubes. Cutting them small will help in the cooking process.
  • Heat a pan, add oil and cumin seeds. Once the cumin sizzles, add the chopped onion and a pinch of salt. Cook for 2-3 minutes. Add the chopped ginger and garlic and saute for a minute.
  • Now add the cubed potato and half cup of water and cook for ten minutes till potato is half way cooked. Mix occasionally and add more water if needed.
  • Now add the garam masala, red chili powder and tomato. Cook for two minutes, until tomato becomes soft.
  • Add the green peas, loquat,salt and 1 to 1.5 cups of water. Give a mix and simmer the curry till potato is soft and the curry becomes little thick.
  • Add fresh coriander leaves and a squeeze of lemon and . Taste and adjust the seasoning.
