Peel the potato, cut them to small cubes. Cutting them small will help in the cooking process.
Heat a pan, add oil and cumin seeds. Once the cumin sizzles, add the chopped onion and a pinch of salt. Cook for 2-3 minutes. Add the chopped ginger and garlic and saute for a minute.
Now add the cubed potato and half cup of water and cook for ten minutes till potato is half way cooked. Mix occasionally and add more water if needed.
Now add the garam masala, red chili powder and tomato. Cook for two minutes, until tomato becomes soft.
Add the green peas, loquat,salt and 1 to 1.5 cups of water. Give a mix and simmer the curry till potato is soft and the curry becomes little thick.
Add fresh coriander leaves and a squeeze of lemon and . Taste and adjust the seasoning.
