Made this Simple healthy Carrot Kosumbari for Ganesha Chaturthi. Here is the recipe….
- Grated Carrot- 2 cups
- Chana dal – 1/4 th cup ( Soak in water for 2 hrs and drain)
- Green chilly -1 chopped
- Salt and lemon juice to taste
- Coriander leaves for seasoning and
- Tadka (tempering) ingredients – mustard seeds, cumin seeds and a pinch of hing.
Combine the carrots, chana dal, salt, lemon juice and coriander.
Do the tadka by adding a tsp of oil, followed by 1/2 tsps each of mustard seeds and cumin seeds, and green chilly. Fry for few seconds and then add the hing. Turn of the heat.
Put the tadka to carrot mixture. Combine and let sit for few minutes before serving.
