Carrot Kosambari (Salad)

Made this Simple healthy Carrot Kosumbari for Ganesha Chaturthi. Here is the recipe….

Recipe:

  • Grated Carrot- 2 cups
  • Chana dal or moong dal – ¼ th cup ( Soak in water for 2 hrs and drain)
  • Green chilly -1 chopped
  • Salt and lemon juice to taste
  • 2 tsp of finely chopped coriander leaves
  • Tadka (tempering) ingredients – mustard seeds, cumin seeds and a pinch of hing.

Proecdure –

1- Saok the moong dal or chana dal for 2 hours in plenty of water. After 2 hours, drain the water.

2 – Combine the carrots, chana dal, salt, lemon juice and coriander.

3 – Do the tadka by adding a tsp of oil, followed by ½ tsps each of mustard seeds and cumin seeds, and green chilly. Fry for few seconds and then add the hing. Turn of the heat.

4 – Put the tadka to carrot mixture. Combine and let sit for few minutes before serving.
