Masala Tomato Curry

Tomato is a very versatile vegetable. There are endless possibilities and recipes with tomato. This particular recipe Masala tomato curry is one of our favourites. Easy recipe which goes very well with chapathi, dosa, pulav, pongal and rice.

Pick the tomato which are fully ripened. If the tomato is not ripened, it makes a huge difference in how the curry tastes.

Recipe:

Medium size fully ripened tomatoes- 6
Medium onions- 2 chopped
Ginger garlic paste- ½ tsp
Cloves- 2
Whole pepper-4
Cinnamon stick- a small piece
Red chilly powder to taste
Fresh/dry coconut- 2 tbsps
Few curry leaves
Few freshly chopped coriander leave
Salt to taste

In a pan add a tsp of oil. When the oil gets hot add the cloves, cinnamon, and whole pepper. Fry for few seconds. Add half onion chopped and ¼th tsp of salt. Mix and cook till onion becomes little brown in color. Now add the coconut and fry for thirty seconds.  Now add one chopped tomato and some coriander leaves. Saute for another minute and turn off the heat. Once the mixture cools , grind it to a Smooth paste.

In a pan add 3 tsps of oil followed by ½ tsp of mustard seeds. Let the mustard pop,then add the curry leaves and the rest of the chopped onion,  turmeric and salt. Saute till the onions are soft. Add the ginger garlic paste and fry for few seconds. Now add the tomato pieces. Cook for a minute and then add the ground mixture and the red chilly powder. Mix and cook in the medium heat for 15 minutes. Finally check for the seasoning. Add lemon juice if required.

Serve the masala tomato curry with chapathi’s, dosa, pulav, pongal or with rice.

    Hi madhavi,

    Often i used to make this curry for chapati, Though the taste was ok, the look and consistency never satisfied me… I think adding coconuts as you mentioned in the recipe will reach my expectation. thanks for the recipe..
