Eggless Almond Cake that’s moist and incredibly delicious. Easy to put together and makes for a prefect tea time cake.

About this recipe

This Almond Flour cake is made with a combination of almond flour and whole wheat flour. As it is eggless, using whole wheat flour and flax egg helps in binding the cake and it doesn’t fall apart.

If you are wondering how I got the deep brown color? I used coconut sugar which gives that beautiful color to the cake. I also added some lemon zest which goes really well with the almonds.

This recipe was my humble attempt to make some thing delicious but using whole some ingredients. It took me few trails to get to the recipe we all liked at home. Hope you enjoy it.

How to make Eggless Almond Cake-

Step by Step Instructions –

1- To make flax egg – add one tablespoon of flax meal to 2.5 tablespoons of water and set a side for 10 minutes.

2- Sieve whole wheat flour, baking soda, baking powder and salt.

3 & 4 – Add oil, sugar and yogurt to a large bowl. Whisk it for a minute until well incorporated.

5- Add flax egg, lemon zest and vanilla extract. Mix it well.

6 & 7 – Add almond flour and gently fold in.

8 – Add the sieved wheat flour to the almond mixture.

9 – Fold the flour gently, until no lumps. The batter should be slightly thick.

10 – Grease a 8 inch round baking dish with oil and line it with parchment paper.

11 – Transfer the batter to the baking pan, smooth it out and top it with slivered almonds.

12 – Bake at 350 F or 175 C for 25-30 minutes until the tooth pick inserted come out clean.

Let the cake rest in the pan for 20 minutes, remove and let it cool completely before slicing.

Pro Tips

Sieve the flour, baking soda and baking powder. This helps to remove any lumps and makes it lighter.

Make sure the yogurt is at room temperature and not sour. Use full fat or 2 % yogurt.

Its very important to use standard measurement cups and spoons to get the best results. I used standard U.S measuring cups.

Grease the pan and line it with a parchment paper for easy removal.

FAQ’s –

Can I use homemade almond flour?

Yes, but make sure it is super fine. Grind the almonds and sieve it.

Can I substitute almond flour with almond meal?

Almond meal is coarse and will not work in this recipe

What can I replace Whole Wheat Flour?

All purpose flour can be used.

What kind of sugar to use?

I used coconut sugar, but regular granulated sugar works too. The cake will be pale in color.

What can I replace flax egg with?

You can try chia egg. It should work, but again I have not tried it.

Can I replace flax egg with regular egg?

Yes, you can replace flax egg with one regular room temperature egg.

Equipment

Ingredients

  • ¾ almond flour
  • ¾ cup whole wheat flour aata
  • ½ cup + ⅛ cup sugar ( I used coconut sugar) which gave the dark color to the cake
  • 3 tablespoons oil ( little less than ¼ cup)
  • ¾ cup yogurt
  • 1 ¼ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • zest of half lemon optional
  • pinch of salt

For Flax Egg –

  • 1 tablespoon flax meal
  • 2.5 tablespoon water

  • Sieve whole wheat flour, baking soda, baking powder and salt.
  • Add oil, sugar and yogurt to a large bowl. Whisk it for a minute until well incorporated.
  • Add flax egg, lemon zest and vanilla extract. Mix it well.
  • Add almond flour and gently fold in. Add the sieved wheat flour to the almond mixture.
  • Fold the flour gently, until no lumps. The batter should be slightly thick.
  • Grease a 8 inch round baking dish with oil and line it with parchment paper.
  • Transfer the batter to the baking pan, smooth it out and top it with slivered almonds.

Baking the cake-

  • Bake at 350 F or 175 C for 25-30 minutes until the tooth pick inserted come out clean.
  • Let the cake rest in the pan for 20 minutes, remove and let it cool completely before slicing.

Notes

If using homemade almond flour, make sure its super fine.
Whole Wheat Flour can be replaced with All Purpose Flour.
The cooking time may slightly vary depending on your oven.

    If we don’t use animal products, can I use almond milk with vinegar instead of curds

      yes… though personally I never tried, I have seen many recipes which use almond milk and vinegar to make buttermilk.

      We need a binding agent to hold the cake. If you eat eggs, you can replace flax with one egg. If you don’t prefer egg, replace it with 1/4 cup yogurt. Hope it helps!

        Thanks so much Madhavi! Just wanted to confirm that if I plan on using the 1/4 cup yogurt instead of egg, it will be in addition to the 3/4 cup yogurt in the ingredients list?

        I have not used yogurt to replace flax egg in this cake. But I know 1/4 cup of yogurt is a substitute for 1 egg ( or in this case flax egg). So it should work. Yes… 1/4 cup yogurt will be in addition to the 3/4 cup of yogurt. If you try it please share your feedback which will help other users. Thank you!

    I appreciate the high quality ingredients you’ve used. My cake is in the oven and smells wonderful. To keep it vegan, I used a thick soy milk with a touch of lemon juice instead of yogurt. It is rising perfectly. Thank you. (from North Carolina)
