3 ingredient Almond Flour Cookies (gluten free & vegan)

These 3 ingredient Almond Flour cookies are chewy, yummy and ridiculously easy to make.

Vegan, gluten free and refined sugar free!

Recently when I shared the Vegan Almond Flour Cookies, a reader asked if they could replace sugar with date paste.  Dates and Almond Flour combo sounded too good that I had to try.  

You will love these Almond Flour Cookies

  • are chewy and lightly sweetened with dates
  • takes 5 minutes to put together
  • has minimal ingredients
  • is vegan, gluten free and refined sugar free
  • makes for a great snack or dessert

Ingredients:

Ingredient notes:

Almond Flour – we need super almond flour in this recipe. Almond meal which is grainy will not work in this recipe.

Dates – we need soft pitted dates.

Step by Step Instructions –

Adjust the oven rack to one above the middle rack and preheat the oven to 325 F.

1 – To a blender add the almond flour and pitted dates.

2 – Pulse it few times till the dates and almond flour are combined well. Press and try forming a ball, if not pulse it couple more times.

Add the vanilla extract (optional).

3 – Divide the dough into 6 equal balls.

4 – Place a parchment paper on the cookie tray. Flatten the dough as shown in the pic and place a almond and few chocolate chips.

5 – Bake in the 325 F preheated oven for about 12 -14 minutes or the till the sides turn pale brown.

Do not over bake. The cookies will firm as they cool.

6 – Let cookies cool for 2 minutes on the sheet and then cool them on a wire rack for at least twenty minutes before enjoying them.

Storage:

Store the cookies in a air tight container for up to 3 days and in the refrigerator for 7-10 days.

FAQ’s –

Can I use almond meal?

we need super fine flour, so Almond meal will not work in this recipe.

What kind of dates to use?

Any soft dates will work. If using little hard dates, soak them in hot water for few minutes.

Ingredients

  • 1 cup almond flour
  • 14 soft dates
  • ¼ tsp vanilla extract (optional)
  • few chocolate chips I used diary free
  • 6 whole almonds (optional)

Instructions

  • Adjust the oven rack one above the middle rack and preheat the oven to 325 F.
  • To a blender add the almond flour and pitted dates.
  • Pulse it few times till the dates and almond flour are combined well. Taste the mixture for sweetness. If you like it more sweeter add couple more dates and pulse it. Press and try forming a ball, if not pulse it couple more times.
  • Add the vanilla extract and divide the dough into 6 equal balls.
  • Place a parchment paper on the cookie tray. Flatten the dough as shown in the pic and place a almond (optional) and few chocolate chips.
  • Bake in the preheated oven for about 12 -14 minutes or the till the sides turn pale brown.
  • Do not over bake. The cookies will firm as they cool.

Notes

 Use almond flour not almond meal in this recipe.
Vanilla extract is optional, but if you have it do add it for a nice flavor.
If you like the cookies on the sweeter side, add couple more dates.
