The famous Gujarati Snack Khaman Dhokla served as chaat with an assortment of toppings like onion, tomato, bhel, chutneys, yogurt and spices.
What is Dhokla Chaat?
Dhokla is a savory and spongy snack from the state of Gujarat. There are two varieties- Khaman Dhola is made with gram flour (besan) and the regular Dhokla is made from rice and lentils. the batter is steamed and topped with a tempering of mustard and cumin seeds.
Chaat is a savory snack from India. They are typically served in road side stalls and have complex flavors which give you sweet, tangy, salty and spicy taste in every bite.
To make Dhokla Chaat we first steam the dhokla and then top it with onion, tomato, carrot, coriander leaves, crunchy bhel mix, yogurt, green and date chutney and chaat masala. Every bite will have a taste of sweet, spicy, tangy, soft and crunchy flavor which will tickle your taste buds.
How to make Dhokla Chaat?
Steaming Dhokla
To make the Dhokla I am using Gits Dhokla mix. I steamed it in the instant pot according to the package instructions. Cook in the steam mode in the venting position. Keep an external timer and cook for 15 minutes.
Yogurt Mixture:
In a bowl add 1 cup yogurt, 1 teaspoon chaat masala, ¼ teaspoon black salt, ½ teaspoon Kashmiri red chili powder. Mix it well. The yogurt should be thick but with a flowing consistency.
I used store bought green chutney and date chutney.
To Serve:
Make small pieces of the dhokla and arrange few in a plate. Top it with yogurt, green chutney and date chutney.
Add onion, carrot, tomato and coriander leaves. sprinkle some kala namak (black salt), Kashmiri red chili powder and chaat masala. Squeeze in some lemon.
Add a generous amount of bhel mix.
Finally drizzle little more yogurt, green and date chutney on the top followed by some onion and coriander leaves.
Serve it immediately.
Tips & Notes:
- Any dhokla recipe which is soft and fluffy will work. I used store bought Gits Dhokla mix.
- Use whole milk yogurt which is not sour. the yogurt should be slightly thick but with a pourable consistency.
- For the crunch use either bhel mix or sev.
- Chaats can be customized to your taste. Add the toppings and chutneys as per your liking.
- Serve the Dhokla chaat immediately for the best texture and flavor.

- 1 medium tomato (seeds removed), chopped
- 1 small carrot, grated
- ¼ cup coriander leaves, finely chopped
- green chutney as needed
- date chutney as needed
- kala namak (black salt) as needed
- chaat masala as needed
- Kashmiri red chili powder as needed
- Bhel Mix as needed
