Best Eggless Blondies

Eggless Blondies -soft and buttery Blondies which are incredibly easy to make. If you are looking for a variation from Chocolate Brownie, you will love these eggless blondies.

What are Blondies?

Blondies are often referred as brownies without chocolate. While brownie uses chocolate /coco powder to flavor the batter, Blondies get their butter scotch flavor from brown sugar.

You will love these Blondies as

  • they are easy to make
  • softer than cookie and less fudgy than a brownie
  • easily adaptable ( you can add in nuts, seeds , dry fruit)

Ingredients for Eggless Blondies:

How to make Best Eggless Blondies:

Melt ½ stick butter in microwave for a minute. You can also melt the butter on stove top. The butter should be just melted, do not over heat. Add ¾ cup of light brown sugar and whisk it for a minute.

Add ¼ cup room temperature yogurt and one teaspoon vanilla extract. Whisk for another minute.

Now add 1 cup of all purpose flour, ½ teaspoon baking powder, ¼ teaspoon baking soda, and ¼ teaspoon salt.

Gently fold in all the ingredients. If you feel the batter is too thick add 1-2 tablespoons of room temperature milk. Fold in ¼ cup chocolates chips.

Line a 8 x 8 inch square pan with parchment paper with extra paper hanging on the sides.

Transfer the batter to the prepared pan and bake in a preheated oven at 350 F for 20-23 minutes until tooth pick inserted comes out clean. Do not over bake the blondies.

Cool the blondies completely before slicing.

Tips and Notes:

  • Use light brown sugar for that beautiful caramel flavor and color.
  • While measuring flour, spoon into measuring cup and level off.
  • If using salted butter, skip the salt.
  • Do not over bake these blondies, they will become dense. As these blondies are eggless little under baking will do no harm.

  • 1 cup all purpose flour (spoon the flour into measuring cup and level off)
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup chocolate chips

Notes

  1. Store the blondies in a air tight container for up to 4 days and for a week in the refrigerator.
  2. The amount of time it takes to bake will slightly vary. I used a dark pan, so my blondies were done by 20 minutes. 
  3. Before adding the yogurt make sure the butter mixture is not hot, if not the yogurt will curdle.
