burfi or barfi is a milk based sweet, popular in India during festivals and gatherings. Some of the most popular barfis are cashew burfi, pista burfi, milk burfi and besan burfi. Almond burfi is also one of the popular burfis made during diwali.

how do we make almond burfi?

Almond burfi is made by soaking the almonds in hot water for 30 minutes. This will help to peel the skin easily.

Peeling almonds require a lot of patience. If you have kids at home, they might enjoy the peeling process.

Place the peeled almonds, with little milk and grind them to a smooth paste.

Cook the almond milk mixture with sugar, ghee and cardamom.

Making almond burfi needs time and patience, but the end result is worth it.

To make a quick version of almond burfi –  use store-bought blanched almond powder. It considerably decreases the amount of time you need to make this barfi.

Almond burfi also called as badam burfi or badam katli is a rich and tasty sweet made with almonds, milk, sugar and ghee. Almond burfi is a special indian sweet made for festivals like diwali and navratri.
Ingredients
  • 1 cup almonds/badam
  • ⅓ cup milk
  • 1 cup sugar
  • 3 teaspoons of ghee
  • 3 pods cardamom
  • few saffron strands
Instructions
  1. soak the almonds in hot water for 30 minutes. This will help to peel the skin easily. Gently remove the skin for each almond and place in a bowl.
  2. Careful while peeling the skin, the almonds will slip.
  3. In the mixer jar, add the milk and peeled almonds. Grind it to a smooth paste.
  4. In a pan add the ground almond mixture sugar and saffron. Cook until the almond mixture starts to thicken and leave the pan.
  5. Add the ghee and cardamom powder and cook for couple more minutes.
  6. Transfer the almond mixture on to a butter pan/parchment paper.
  7. Let the mixture cool for five minute,
  8. Apply some ghee on the palms and knead the mixture for two minutes.
  9. flatten the dough with you palms or use a rolling pin.
  10. cut the burfi to desired shape and garnish with almonds.
  11. Serve the badam burfi during festival season.

Step by Step procedure on how to make almond burfi-

Grind the almonds and milk to a smooth paste.

In a pan add the ground almond mixture sugar and saffron. Cook until the almond mixture starts to thicken and leave the pan.

Add the ghee and cardamom powder and cook for couple more minutes. The mixture will start to separate from the pan.

Transfer the almond mixture on to a butter pan/parchment paper. Let the mixture cool for five minutes.

Apple some ghee on the palms and knead the mixture for two minutes. Flatten the dough with you palms or use a rolling-pin.

Cut the burfi to desired shape and garnish with almonds.

Serve the badam burfi during diwali or any festival season.
