Frozen Mixed Veggies Stir Fry

Frozen Mixed Veggies Stir Fry– quick and easy Indian style stir fry made with frozen veggies.

Makes for a easy week night dinner. Serve with rice, pickle, rasam and yogurt.

I always like to have a bag of frozen veggies in my freezer. They come very handy to fix meal on any busy day. You can make a stir fry, or add them to your fried rice, pulav or curry.

Sharing a tasty Indian style frozen mixed vegetable fry cooked with onion, ginger-garlic, fresh coconut, garam masala, coriander and red chili powder. The stir fried veggies coated with all the spices and coconut makes for a tasty side to enjoy with rice.

I have used a a combination of green beans, carrot, corn, green peas and lima beans in the recipe.

How to make Indian style frozen mixed vegetable fry (Indian sabzi) –

Step 1- Heat oil in a pan and add the mustard seeds. When the mustard pops, add the chana dal and cumin seeds. Saute till brown. Add chopped onion, ginger and garlic and turmeric powder.

Step 2- Saute till onion turn slightly soft, about five minutes. Now add the frozen mixed veggies. Give a mix ,close the lid and mix occasionally and cook till the veggies turn soft. You can splash little water while cooking to avoid burnt bottom.

Step 3- Once the veggies are cooked completely, add the fresh coconut, red chili powder, coriander powder, garam masala and salt.

Step 4- Saute for another five minutes, taste and adjust the seasoning . Finally finish it off with some lemon juice and coriander leaves.

Serve the veggie stir fry with rice and a squeeze of lime juice.

Do you need to thaw the frozen vegetables to stir fry?

No, you don’t have to thaw them. You can add the frozen veggies directly to make the stir fry.

How do you make frozen vegetables taste good?

By adding the right amount of spices and herbs and cooking them slowly till done.

Ingredients

  • 2 heaping cups frozen mixed vegetables I used green beans, corn, carrot, green peas and lima beans
  • 1 medium onion, finely chopped
  • 1 tsp minced ginger
  • 1 tsp chopped garlic
  • 1 to 2 tbsp fresh grated coconut
  • 1 tsp red chili powder or to taste
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp chana dal optional
  • ½ tsp mustard seeds
  • 3 tsps oil
  • handul of chopped coriander leaves
  • salt to taste
  • lemon/lime juice to taste
