Indian Street Corn Salad

Indian Corn Salad – refreshing salad made with fresh corn, bell pepper, coriander, chili powder and chaat masala.

Simple salad which comes together in just a few minutes and is perfect for the summer season. You can either sauté the corn or grill them. Either way, it is irresistibly delicious and makes for a great snack or appetizer.

This recipe is inspired by the popular Indian street style corn on the cob. Grilled corn is rubbed with butter, salt, chili powder, lemon juice and topped with fresh coriander leaves. It is one of the best ways of enjoying corn on the cob.

I have used the same flavors of the Indian style corn on the cob and made a salad with it. I also added bell pepper and onion for crunch. Serving in the form of a salad works well when you are making for big crowd or a get together.

Ingredients:

Step by step process:

You can cook the corn in two ways- grill or saute in the pan.

1- Grill them until it is charred and cooked. Do not cook on high flame, if not they will become too dark.

2- Saute the Corn – Scrape off the corn kernels with a knife. To a skillet heat some butter and add the corn kernels. Mix it and saute for 10 -12 minutes till they become slightly soft. After the initial mix do not mix too much, that will help us give some brown color to the corn.

Remove and let them cool, while you prep the other ingredients.

Add the cooled corn to a large bowl, add the finely chopped bell pepper, onion, coriander leaves and jalapeno.

Add cumin, red chili powder, pink salt, chaat masala and a generous squeeze of lemon juice. 

Toss everything and taste for seasoning!

Serve the Indian Corn Salad as a starter or as part of a meal with the main course.

Frequently Asked Questions:

Can I use frozen corn?

You can use frozen corn, just saute them in the skillet. If corn is in the season use the fresh ones.

How to remove the strong flavor of fresh onion?

Chop the onion and soak them in little water and lemon juice for 10 minutes. Wash and drain and use it in the salad.

Ingredients

  • 3 large ears corn, husks and silk removed
  • 1 medium bell pepper, finely chopped any color is ok
  • ½ cup onion, finely chopped
  • ½ cup fresh coriander leaves, finely chopped
  • pickled or fresh jalapeno to taste
  • 1 tablespoon butter
  • ½ teaspoon Kashmiri red chili powder
  • 1 teaspoon chaat masala
  • 1 teaspoon cumin powder
  • Pink Himalayan salt to taste
  • lemon juice to taste

Instructions

Mixing the Salad –

  • Add the slightly cooled corn to a large bowl, add the finely chopped bell pepper, onion, coriander leaves and jalapeno ( or green chili)
  • Add cumin, red chili powder, pink salt, chaat masala and a generous squeeze of lemon juice. 
  • Toss everything and taste for seasoning!
  • You can also add some masala peanuts on the top.

Notes

To remove the strong flavor of fresh onion – 
Chop the onion and soak them in little water and lemon juice for 10 minutes. Wash and drain and use it in the salad.
You can skip the jalapeno or green chili and just use the red chili powder.
