20+ Easy Vegetarian Indian Curries

Here is my collection of 20+ Vegetarian Indian Curries which are wholesome, indulgent, and packed with traditional Indian flavors. From restaurant favorites to classics, these curries will surely please your palate.

Depending on the region the method and the ingredients used in a curry vary. In South India ingredients like green chili, mustard seeds, curry leaves and coconut milk are used to make curries. While in North India, curries use garam masala, whole spices, red chili powder, ginger and garlic, cream and cashew.

Types of Vegetarian Curries?

Vegetarian Curries can be divided into three categories.

Curries made with lentils and legumes ( like Red lentil Curry (dal), Rajma Masala, Chickpea Curry )

Curries made with vegetables (pretty much any vegetable can be used like potato, egg plant, bell pepper, green peas, edamame, zucchini, squashes and more)

Curries made with Paneer ( Indian cottage cheese). Vegans can substitute paneer with extra firm tofu.

What can I serve Indian Curry with?

Curries can be served with chapati, naan, plain rice or cumin rice.

Can I freeze the Curry?

Curries are perfect dishes which can be frozen. Store them in a air tight container for 1 to 2 months. Thaw them overnight in the refrigerator and warm them thoroughly on the stove top.

Paneer Butter Masala

Mango Curry
