Curries from India fall into two categories – North Indian Curry and South Indian Curry.
South Indian curries use green chili, mustard seeds, curry leaves and coconut milk.
North Indian Curries use garam masala, whole spices, red chili powder, lots of ginger and garlic and cashew cream ( or cream for non vegan recipes).
